Shape were the Project Managers on the conversion of a heritage building to a modern restaurant, bottleshop and bar. The tight time frames and commercial drivers meant that significant components of the interior fit out were designed during the construction period under a cost plus arrangement. The project blends heritage features with modern amenities and has a high level of sustainable features. For example the concrete and brickwork removed during demolition was crushed and re-utilised in the rammed earth walls. The construction involved the installation of a commercial kitchen, new underground cellar/function space, alfresco areas and a mezzanine. The retention and protection of the original features during the construction phase was a key deliverable.
